Banana Fudge Fingers


    1. Preheat oven to 200C
    2. Line 18cm square cake tin with baking paper
    3. Mash banana into a large bowl, add butter, sugar, vanilla then beat with an electric whisk until fluffy
    4. Add flour and mix again to form a soft paste
    5. Spread mixture into baking tin ensuring it reaches the edges
    6. Bake for 15-18 until golden brown and well risen
    7. While cake is baking, chop fudge up as finely as possible.
    8. Remove cake from oven and scatter chopped fudge on cake. Press it down carefully using the back of a spoon
    9. Return to the oven for a further 2 minutes
    10. Allow to cool and then slice into fingers

For this recipe you will need:

  • 1 banana
  • 75g unsalted butter
  • 125g fudge cubes
  • 50g light muscovado sugar
  • 5ml vanilla extract
  • 175g SR flour
