Banana Fudge Fingers |
Method
- Preheat oven to 200C
- Line 18cm square cake tin with baking paper
- Mash banana into a large bowl, add butter, sugar, vanilla then beat with an electric whisk until fluffy
- Add flour and mix again to form a soft paste
- Spread mixture into baking tin ensuring it reaches the edges
- Bake for 15-18 until golden brown and well risen
- While cake is baking, chop fudge up as finely as possible.
- Remove cake from oven and scatter chopped fudge on cake. Press it down carefully using the back of a spoon
- Return to the oven for a further 2 minutes
- Allow to cool and then slice into fingers

- 1 banana
- 75g unsalted butter
- 125g fudge cubes
- 50g light muscovado sugar
- 5ml vanilla extract
- 175g SR flour
